These Nutty Toasted Oat Chocolate Chip Cookies are crisp on the outside, gooey on the inside. Finished with extra dark chocolate and sea salt

1) Start by toasting the oats in a pan

2) The oats will turn golden and smell like popcorn
DISHBYRISH.CO.UK
3) Next melt some butter on a low heat
DISHBYRISH.CO.UK
4) Then place it on a medium heat, it will foam up
DISHBYRISH.CO.UK
5) The milk solids will caramelise into brown butter
DISHBYRISH.CO.UK
6) Place the cooled brown butter into a mixing bowl
DISHBYRISH.CO.UK
7) Add the white sugar, brown sugar, and vanilla paste
DISHBYRISH.CO.UK
8) Whisk the brown butter and sugar up
DISHBYRISH.CO.UK
9) Add in the dry ingredients, oats, nuts and chocolate
DISHBYRISH.CO.UK
10) Add the milk and mix into a cookie dough
DISHBYRISH.CO.UK
11) Roll into 60g cookie dough balls
DISHBYRISH.CO.UK
12) Press extra dark chocolate on top (worth it)

13) Bake the cookies till just lightly set on the outside

14) Use a round cookie cutter to swirl these into even circles

15) Let them cool for 5 minutes on the tray
DISHBYRISH.CO.UK
16) Transfer to a wire rack and top with flaky sea salt

17) Enjoy them whilst warm for extra gooey centres
