These crispy onion bhajia are made with slices of red onions tossed in spices and coated in a flavourful batter and fried till golden brown.

1) Start by slicing your onions into strips

2) Transfer the onions to a large mixing bowl

3) Add in all the ground spices and salt

4) Then add in the chickpea flour and cornflour
DISHBYRISH.CO.UK
5) Give it all a good mix

6) Add in some grated garlic, ginger, and coriander

7) Let it rest for 20 minutes, then add baking powder

8) Take a tbsp of batter
DISHBYRISH.CO.UK
9) And fry in 180'C oil in batches
DISHBYRISH.CO.UK
10) Until golden brown and super crispy

11) Finish with a dusting of chaat masala

12) And dunk into some spicy coriander chutney
